Tapas Cheesy Potato Bites
  1. Preheat oven to 450°F.
  2. Clean potatoes and dry them.
  3. Slice potatoes halfway through 1/8 inch apart, creating fan
  4. Toss potatoes in olive oil, salt, cilantro and chipotle powder until completely coated.
  5. Spread potatoes onto large baking sheet and roast for 14 minutes until crispy and tender.
  6. Remove from oven, sprinkle Andrew & Everett Grated Parmesan Cheese on top of potatoes and return back to oven to bake another 4 minutes.
  7. While still hot on baking sheet, sprinkle Andrew & Everett Shredded Mexican Blend Cheese onto potatoes.
  8. Serve with lite sour cream (optional). Enjoy!
